Broiled Salmon with Pineapple-Cilantro Sauce

Recipe Ingredients

1 medium pineapple, peeled, cored, cut into 1" chunks
3/4 cup unsweetened pineapple juice
2 tablespoons lime juice
2 cloves garlic, minced
1 teaspoon minced jalapeño pepper
2 tablespoons chopped cilantro
1 tablespoon cornstarch
2 tablespoons cold water
2 to 3 tablespoons sweetener
Black Pepper
6 salmon filets, 4 oz each, broiled

Makes 6 servings

Recipe Cooking Instructions

Heat pineapple, pineapple and lime juice, garlic and jalapeño pepper to boiling in medium saucepan; reduce heat and simmer, uncovered for 5 minutes.

Stir in cilantro; heat to boiling.

Mix cornstarch with cold water; stir into boiling mixture. Boil,
stirring constantly, until thickened. Remove from heat;and allow to cool.

Stir in sweetener and pepper. Serve warm sauce over broiled salmon.

Note:: Pineapple-Cilantro Sauce is also excellent served with pork and lamb.

Breakfast Zesty Shake

Recipe Ingredients

1/2 cup low-fat vanilla yogurt
1/4 cup skim milk
2 tablespoons frozen orange juice concentrate
1 tablespoon wheat germ
1 tsp sweetener
1/2 teaspoon vanilla extract
3 ice cubes

Yield: 1-1/2 cups

Recipe Cooking Instructions

Process all the ingredients in a blender until smooth and frothy. Pour into a glass and slurp!

Variation: Add 1/2 cup sliced bananas or strawberries; blend as directed.

Serving size: 1-1/2 cups:
